Sambal tumis is the base of half a Malaysian kitchen — it turns anchovies, eggs, prawns or okra into a meal. Made properly it takes the better part of an hour: dried chillies soaked and blended, shallots and garlic fried until they stop smelling raw, then everything cooked down until the oil rises to the top.

This jar is that process, done in small batches. The chilli is soaked rather than powdered, so the heat is round instead of sharp, and there is enough tamarind to keep it from turning sweet.

It is a base, not a finished dish — warm it in a pan, add your protein, and adjust salt and sugar to your own taste at the end.
